My Fabulous Southwest Veggie Taco

Fabulous Southwest Taco

This is a great vegan dish! You will not believe how filling it is!!! NO MEAT, and oh so good!

THE BLACK BEANS
  1. 1/2 cup canned low-sodium black beans, drained
  2. 1/4 tsp. extra-virgin olive oil
  3. 1 dash ground chili powder
  4. 1 pinch ground cumin
  5. 1/4 tsp. ground coriander
  6. 1 tsp. Bragg Liquid Aminos
  7. 3/4 cup cooked brown rice, hot
  8. 1/4 cup cooked corn kernels
  9. 1 (6 inch corn tortilla)
FRESH SALSA
  1. 1/4 medium avocado, mashed
  2. 2 Tbsp. fresh pico de gallo (use our recipe for a fresh option or purchase your fav)
THE BLACK BEANS
  1. Combine beans, corn, oil, chili powder, cumin, coriander, Bragg Liquid Aminos, in a medium saucepan; mix well.
  2. Heat mixture over over medium heat for 1 to 2 minutes, or until heated thoroughly.
  3. Remove from heat and add to a bowl.
FRESH SALSA
  1. Combine mashed avocado and fresh pico in small bowl; mix well. Set aside.
PREPARE YOUR TACO DIVA
  1. Add Kernel Corn to the Black Beans and Rice you placed in a bowl earlier.
  2. Place the beans, rice and corn combo on one half of the tortilla, fold.
  3. Serve with avocado mixture. (I prefer to spread the salsa inside the taco)
Notes
  1. Back in 2014, it was the first time I prepared beans WITHOUT SALT! I’d never used any of the seasonings above, actually!! But, of course now, they are a staple in my home!
