Almond Crusted Orange Chicken Tenders

Welcome to our latest edition of Fabulous Friday Tips!  This week, we are serving up recipe goodness!!  If you’re a lover of crispy chicken tenders, you’re going to love this clean eating alternative  😀 

 

Chicken Tenders

Ingredients
  1. Ingredients
  2. pat dry 8 medium chicken tenders with paper towels.
  3. 2 Tbs fresh squeezed orange juice 2 Tbs Dijon mustard pinch of sea salt
  4. 1 cup blended almonds (blend in blender or food processor just until crumbly)
  5. the zest of one fresh orange (not the white part…only the orange zest)
  6. ground pepper to taste
  7. 1/4 tsp garlic powder (can omit if you wish)
Instructions
  1. Preheat oven to 350 f
  2. Spray flat baking sheet with coconut oil spray.
  3. Combine orange juice, mustard and salt in a small bowl.
  4. On a separate plate combine remaining ingredients.
  5. Dip chicken into the mustard mixture, then dredge with almond crumb mixture.
  6. Place on baking sheet, bake 15-17 minutes until cooked through (depends on the size tenders)

    I wasn’t sure how this would come out, but it was delicious! I’ve got to make some more (hubby ate half of them!) but I ran out of the Dijon mustard. This is going into my recipe rotation!

    The flavor of the orange juice and the crunch of the almond on these tenders were superb. My dad love the taste as well, he ask me to make some for him.
