Breakfast Roasted Sweet Potato

Ingredients

  • 4 sweet potatoes peeled and cubed
  • ½ tablespoon olive oil
  • 2 teaspoons smoked paprika
  • 2 teaspoons pink salt
  • 1 teaspoon garlic powder

Instructions

  • Preheat the oven to 400°F.
  • Toss the sweet potatoes with olive oil, smoked paprika, pink salt, and garlic powder in a large bowl until evenly coated.
  • Spread the seasoned sweet potatoes in a single layer on a baking sheet lined with foil (sprayed lightly with cooking spray).
  • Roast for 25-30 minutes, flipping halfway through, until crispy on the outside and tender on the inside.
  • Serve and enjoy as a delicious, healthy breakfast side! Perfect to pair with lean protein like turkey sausage or eggs.
