- 2 bananas
- 1 cup of all-natural almond (or preferred nut butter)
- 1tsp of coconut oil
- 2 large eggs
- 1/2 tsp pure vanilla extract
- 1 tsp baking soda
- Pre-heat your oven to 400 degrees
- Grease muffin tin lightly with coconut oil
- Add all ingredients to a blender
- Blend until smooth and combined well
- Pour batter into prepared tin
- Bake 13-14 minutes
- Let cool & enjoy!!
- For added flavor, you can add fruit to the muffin tin after pouring the batter blueberries or even banana slices are good.
- You can also add chopped pecan, almonds or cashews to the muffins
- Be careful not to add too much more... Guilt free eating π
