THE SUPERFOOD OF THE DAY: LENTILS!
6th on our list of our select 10 SuperFoods is Lentils sis! This powerhouse legume can help you lose weight and may reduce diabetes risk! Lentils have been uncovered at archeological sites throughout the Mideast. Today, they are cosumed all over the world, so there are lots of great recipes. In India, lentils are a staple in vegetarian diets, often prepared as a simple stew. In France, you’ll find tiny, tender lentils in salads. There’s a lot to like about lentils, which are quick to cook and unlike beans, don’t have to soaked. Lentils are rich in polyphenols and are an excellent souce of protein and fiber. They’re also a good source of B vitamins, including folate, as well as iron and magnesium.
ALSO TRY: Legumes rich in protein and fiber include split peas, chickpeas, black beans, kidney beans, cranberry beans, white beans, and navy beans.
HOW TO BUY & ENJOY LENTILS
- Look for lentils that are bright – if they are dull, they are not as fresh
- They are less digestively problematic than other beans
- With more than 50 different varieties, you’re sure to find a favorite color, flavor and size.
- Teeny green Puy and French lentils are adored by chefs, because they stay firm when cooked.
- Red lentils soften considerably but tastes sweeter than others
- Lentils cook quickly some in just 20 minutes.
