LET SUPERFOODS BE THY MEDICINE: LESSON 7 – MUSHROOMS

THE SUPERFOOD OF THE DAY: MUSHROOMS!

7th on our list of our select 10 SuperFoods is Mushrooms sis! Many popular culinary mushrooms also have health benefits.  Shiitake, maitake, matsutake and wood ear mushrooms apper to be especially potent in addition to being deeply flavorful.  Musrooms readily lend their strong flavors to fats and liquids, so one way to save money is to use small quantities in recipes like risotto and beef stew.  All mshrooms are good sources of fiber, antioxidants, magnesium and potassium and boast much more protein, vitamin D and B vitamins – nutrients mainly obtained from animal foods – other than produce.  (To maximize vitamin D, mushroom growers have to be sure to expose them to sunshine or a particular kind of UV light). Mushrooms also have many applications in herbal medicine, where they really shine at boosting the immune system.  Many species are also being studied for their ability to inhibit tumor growth.

ALSO TRY: Few foods are as widely used in herbal medicine as mushroom; two that stand out are garlic and turmeric, both featured in this free challenge.


HOW TO BUY & ENJOY MUSHROOMS

  • Frozen and dried mushrooms cost less than fresh. Drying them intensifies enzymatic activity and flavor, and they are easily reconstitued in hot water.  Strain and use the soaking liquid to cook rice, pasta and soups.
  • Mushroom is one of few foods that improves somewhat in flavor after they harvest
  • Store mushrooms loosely in a partially closed container, with a towel tucked in to absorb moisture.

    Nicole Dyer-Twyman … yes!! I want to try it(vegan cheese of course). I’ve made “chiKen”, pulled “poRk”, portabella “steAK”, I have a recipe for a “crAb cake” using lion’s mane, but the local grower here is sold out.
