THE SUPERFOOD OF THE DAY: EGGPLANT!
8th on our list of our select 10 SuperFoods are eggplants sis! Eggplant is an important food in global cuisine, especially popular in Italy. This creamy meaty veggie is found in many vegetarian dishes. Cooks also enjoy its ability to absorb flavor. High in fiber and low in calories, you can find tons of recipes that are healthy and feature eggplant; including those specifically designed to defeat diabetes. However, because eggplant absorbs fat easily, be careful of your ingredient quantities. Otherwise you may not know how much salt fat and spice the eggplant is absorbing. You will also want to leave the skin on and enjoy all of the antioxidants.
ALSO TRY: Squash is another example of a high fiber low calorie food with versatile uses in healthy recipes. because it can absorb a lot of flavor.
HOW TO BUY & ENJOY EGGPLANTS
- Smaller eggplant taste much sweeter
- the sourish, bitter taste of eggplant becomes more mellow after roasting and smoking
- Depending on the recipe and the texture you desire in a finished eggplant dish, you may remove the excess moisture ahead of time by salting the flesh and then patting it dry.
- Eggplants are best enjoyed fresh
- To maintain, flavor, color, and nutrietns always store at room temperature rather than in the fridge.
