THE SUPERFOOD OF THE DAY: BLUEBERRIES!
9th on our list of our select 10 SuperFoods are blueberries sis! Blueberries are native to North America, which makes it easier to find fresh and local than some other superfood fruits. Both wild and cultivated bluberries are full of nutrients (especially the tiny and dark wild kinds). Blueberries contain dietary fiber as well as vitamins C and K, but what may be most interesting about blueberries is that they’re packed with antioxidants. More specifically, they’re high in anthocyanins, which may have benefits to heart health! Whatever the mechanism, studies have found that blueberries are associated with a number of health benefits, including improved insulin sensitivy and protection of mental function as well as lowered risk of heart disease.
ALSO TRY: Several other dark berries – including blackcurrants, elderberries and strawberries – are rich in anthocyanin pigments and may have similar health properties to blueberries
HOW TO BUY & ENJOY BLUEBERRIES
- After harvest, blueberries will continue to develop aroma, but not sweetness.
- Try to eat them shortly after they’ve been picked, whenever possible.
- Blueberries retain flavor, nutrietns and shape quite well when frozen or baked.
- To store extra berries, freeze them in a single layer, not touching, on a sheet pan.
- When they are frozen solid, more then to a sealed container.

While I have worked in corporate America as a certified senior project / program / portfolio manager for Fortune 500 companies like Microsoft, Procter & Gamble & IBM, my passion is service. I include blueberries in my smoothies. I will continue eating them.
I love, love, love blueberries now, but wouldn’t touch them as a child. Glad I changed my mind! One of my favorite things to do is buy a few pints when they’re on sale, then freeze them as suggested above. They’re then ready for muffins, pancakes, smoothies, or this smoothie bowl I can’t wait to try!
This was my first time making a smoothie bowl! It seemed to be about the same amount as when I make a regular smoothie, but much more filling; I couldn’t finish it all! Love this recipe and will definitely make it part of my repertoire.
