  1. 1 medium plum tomatoes, halved lengthwise, seeded, and thinly sliced (1 cup of cherry tomatoes are okay as well)
  2. 1/4 red onion, peeled, halved lengthwise, and thinly sliced
  3. 1 cup of English cucumber, halved lengthwise and thinly sliced
  4. 2 tsp of extra-virgin olive oil
  5. 2 TBsp red wine vinegar
  6. 1 tsp balsamic vinegar
  7. 1 Tbsp fresh lemon juice
  8. 1 Tbsp chopped red onion
  9. 1 Tbsp chopped fresh Italian parsley
  10. 1 Tbsp chopped fresh basile leaves
  11. Pink salt and black pepper to taste
  1. Combine red wine and balsamic vinegars, lemon juice and oil in small bowl; mix well and set aside
  2. Combine cucumber, tomatoes, onion, parsley, basil, salt, in a large bowl; mix well
  3. Drizzle dressing over cucumber mixture; toss gently to blend.
