Spicy Sweet Potato Salad (Great for a BBQ)

Spicy Sweet Potato Salad

Great side Dish for a BBQ

Ingredients
  1. 4 sweet potatoes, medium diced
  2. 2 Tbs extra virgin olive oil
  3. 1 pint cherry tomatoes, sliced into halves
  4. 2 avocados, diced, & coated with 1 Tbs fresh lime juice
  5. 1 cup black beans (rinsed if canned)
  6. 1/2 cup plain greek yogurt
  7. 1 Tbs favorite hot sauce (more or less depending on heat preference)
  8. 1 tsp ground cumin
  9. 1 Tbs apple cider vinegar
  10. sea salt and pepper to taste
  11. 2 Tbs chopped fresh parsley, cilantro, or chives (use your fav)
Instructions
  1. Preheat oven to 425
  2. Toss diced potatoes with olive oil
  3. Roast potatoes on flat sheet pan (I line with parchment paper) for about 30 minutes
  4. In medium bowl whisk until combined well: yogurt, hot sauce, cumin, vinegar, fresh herbs, and salt & pepper.
  5. Gently combine all ingredients in a large bowl
  6. Sprinkle with a pinch of fresh herbs
  7. Serve immediately or refrigerate covered

    OMGosh! If you have not tried this you are denying your tastebuds of GREATNESS. This has topped my clean eating charts. It was soooo good & filling. I thought I was cheating. Another hit😍

    I never thought of Sweet Potato Salad as something I’d want to try! And I don’t like tomatoes either. But OMGOODNESS the combination is delicious! Another recipe that will go into my rotation!
