Banana Almond Waffles

Banana Almond Waffles

Ingredients
  1. 2 bananas
  2. 1 cup all-natural almond, or other nut butter
  3. 1 tsp melted unrefined coconut oil
  4. 2 large eggs
  5. 1/2 tsp pure vanilla extract
  6. 1 tsp baking soda
Toppings
  1. 1 Tbsp Dark Chocolate (melted on top or chips you can add to the batter) or Honey
  2. 1 whole Fruit like banana or 1/2 cup of berries of choice
Instructions
  1. Preheat waffle iron
  2. Grease or spray lightly with coconut oil
  3. Add all ingredients to a blender (minus toppings)
  4. Blend until smooth and combined well.
  5. Pour just enough batter into the center of iron. Smooth a bit with spatula. Cook.
  6. Add your toppings Enjoy!
Notes
  1. 1 waffle per serving.
  2. Can last in fridge for 3 days
  3. Freeze any extras and pop in toaster when ready to eat!

    I love this recipe! I know it by heart and I can make waffles, pancakes, muffins or a loaf. Very light and just all so yummy!
