Banana Oatmeal Blender Muffins

Hey diva!!
Do you want to turn your ugly bananas into something tasty vs. wasting your money and trashing them?  That’s actually what I used to do!!!

Well,  when you know better you do better and you share what you know with others!!!  

Sooo, I’ve now learned there are actually quite a few tasty things you could do with “rotten bananas” , but one of my favorite banana transformations is below just for you!!

Banana Oatmeal Muffins

Ingredients
  1. 2 cups dry oats
  2. 2 large ripe bananas
  3. 2 large eggs
  4. 1 cup plain unsweetened Greek yogurt
  5. 2 Tbps raw honey
  6. 1 1/2 tsps baking powder
  7. 1/2 tsp baking soda
  8. 1/2 tsp vanilla extract
  9. 1/8 tsp sea salt
  10. Up to 1/2 cup mix-ins: chocolate chips, walnuts, pecans, raspberries, or blueberries (fresh or frozen)
Instructions
  1. Preheat oven to 400 degrees.
  2. Lightly grease a 12-cup standard muffin tin or line with liners. If using liners, lightly spray them.
  3. Place the all ingredients but the mix-ins in a blender.
  4. Blend on high, stopping to scrape down and stir the ingredients, until the batter is smooth, about 2-3 minutes. Then, stir in the mix-ins.
  5. Divide the batter between the prepared muffin cups, filling each no more than 3/4 of the way to the top.
  6. Bake for 13-15 minutes, until the tops of the muffins set and a toothpick inserted in the center comes out clean.
  7. Cool in the pan for 10 minutes. Serve
Notes
  1. 2 Muffins is one serving
  2. Muffins continue to "cook" after you've taken them out of the oven.
  3. However because of the lack of gluten, it may take longer to bake than indicated. If it doesn't look done cook another 10-15 minutes. Monitor for your oven's result.

    These are so good. I add blueberries, strawberries and dark chocolate chips. This gives me a variety to choose from. Good for breakfast or snack.

    The Banana Oatmeal Blender Muffins are the bomb. Nicole Dyer-Twyman has done a great job with the recipe. The recipe makes 12 muffins so you have breakfast or a snack for 6 days if you don”t have to share. They are so good it takes will power not to each more than two. Ladies if you have not tried them give this recipe a shot I like them with walnuts.and chocolate chips.

    OMG this was so easy to make and so good to eat! The kitchen smelled wonderful with the batter mixed with raspberries, blueberries and some chocolate ones for my 2 boys. Very light but filling. The boys thought I needed to throw the bananas away. I told them let mama work her magic..LOL!

    Simple recipe full of flavor. Added cinnamon because I didn’t have any vanilla extract. I will definitely add thsee muffins to my breakfast options. My 6 year old daughter also liked them BUT wanted more chocolate chips!!

    These muffins were so good and moist. I was skeptical at first and almost didn’t make them. Once I did and ate one, I wanted to keep eating them. Another so over!!!!

    Banana Oatmeal Muffins are so good. I added pecans. Easy to prepare.

    This was easy to make although I probably need a more poswerful blender, I wound up dumping everything into a bowl and using a hand mixer. They were still good, although next time I’ll probably use blueberries instead of chocolate chips.
