Fabulous Carrot Cake Oatmeal

There are so many ways to make oatmeal.  But if you are a carrot cake lover like myself this easy recipe will help you get in a Fabulously healthy breakfast that tastes like dessert; but without all the added fat and calories.

Here’s what you will need:

  • Quick Oats (I prefer Oat Revolution Steel Cut Classic Oats)
  • Chopped Pecans
  • Raisins
  • Non-Fat Vanilla Greek Yogurt
  • Carrot Slices
  • Honey
  • Cinnamon
  • Nutmeg
  • Vanilla Extract


I have my own food stash at work so I don’t have to lug all this stuff around with me every day.  It’s so simple and takes only 5 minutes.

Step 1. Pull a packet of the oatmeal out of the box, carefully open it and put contents into a microwave safe bowl


Step 2. Use the pouch that the oatmeal was packaged in to measure the correct amount of water and add to bowl.



Step 3. Add 1/4 cup of carrots plus vanilla, cinnamon and nutmeg to taste


Step 4. Microwave on High for 2 Minutes


Step 5. Add 1 Tbsp of raisins, 5 pecan halves and 1 tsp of honey to hot cereal


Step 6. Add 2 Tbsp of non-fat Greek Vanilla Yogurt to the top


Mix all ingredients together and enjoy.
