- 1 egg
- 1 cup cooked mashed sweet potato (about 1 medium)
- 2 tbsp coconut flour
- 1/4 cup unsweetened almond milk
- 1 tsp cinnamon
- Optional - scoop of fav protein powder
- Whisk the egg then mix everything together well
- Heat the waffle iron over medium heat, grease it well
- add in the batter
- Ignore the light on your waffle maker and cook for 9-10 nminutes
- For a mini waffle maker, 6-7 miutes
- Don't check them too early or they stick to the top
- Top with a pat of Ghee
- Drizzle with Organic honey or Maple Syrup
- Makes 2 big or 3 mini waffles

These Sweet Potato Waffles are very good! I used vanilla flavored protein powder and a white sweet potato. There’s no need for butter or syrup, just eat and enjoy!
These waffles are sweet and tasty without the syrup. The sweetness of the potato really comes through. I made some with and without the protein. Very good.
