Fresh Veggie Salad w/ Homemade Dressing

Fresh Veggie Salad with Homemade Dressing

  1. 1 (15 oz) can chickpeas, drained & rinsed
  2. 1/4 red onion, slivered
  3. 1 yellow bell pepper, seeded & chopped
  4. 1 orange bell pepper, seeded & chopped
  5. 1 green bell pepper, seeded & chopped
  6. 2 cups grape tomatoes, sliced
  7. 2-4 small English cucumbers, chopped
  8. 4 stalks celery, sliced
  9. 1/3 cup kalamata olives,
  10. sliced 4 oz feta cheese, cubed
Dressing Ingredients
  1. 1/4 cup extra virgin olive oil
  2. juice of 2 fresh lemons
  3. 2 cloves garlic, minced
  4. 2 Tbsp. fresh parsley leaves, chopped
  5. sea salt & pepper to taste
  1. Whisk together the dressing ingredients.
  2. Toss all salad ingredients in a large bowl with the dressing and serve.
