Overnight Peanut Butter Oats

PREPARATION TIP:
Use wide mouth mason jars, not the regular size mouth. 
Also, use only 10 oz jars when preparing 1 serving of overnight oats; anything else is too large.

Overnight Peanut Butter Oats
Serves 4
UNBELIEVABLY GOOD! You won' think of oatmeal the same again!

Ingredients
  1. 2 1/2 cups unsweetened plain almond milk, or coconut milk
  2. 2 Tbsps chia seeds
  3. 4 Tbsps natural salted peanut butter
  4. 4 Tbsps raw honey
  5. 2 cups gluten-free rolled oats
  6. 2 Sliced bananas
  7. 1/2 cup chopped fresh strawberries
Instructions
  1. To a large mixing bowl, add almond milk, oats, chia seeds and honey and stir to combine.
  2. Prepare 4 mason jars. Fill each halfway with the oatmeal mixture, then add one Tablespoon of peanut butter and cover each equally with the remaining oatmeal.
  3. Cover securely with the lids and set in the refrigerator overnight (for at least 6 hours). Before serving, stir, add sliced fresh bananas and strawberries and enjoy!
Notes
  1. Yes! They are eaten cold, like pudding🙌Prep several of these for your week ahead - place in the refrigerator, give a little stir in the morning...breakfast is on! 👉Absolutely no cooking required

    I have sensory issues when it comes to textures of certain food but those Overnight Peanut Butter Oats passed the test!!! I used stevia instead of maple syrup. They are delicious!! Even with the stevia, you have enough sweetness!!!
    If you struggle with food textures, just give these a try!
    You will not be disappointed!!!😁

    This is one of my favorite. I could eat it for breakfast or a healthy snack. Never thought I would like overnight oats but this goodness changed my mind. I know you don’t have to warm them up before you eat, but I warm mine just a little because I like to peanut butter to be melted. Mmmm GOOD!!

    I was nervous about the texture of this recipe, but these Overnight Peanut Butter Oats are better than the cereal I thought I was missing! No cooking required is always a bonus!

    I have always hesitant about eating anything that I could taste the texture of the oatmeal but this was delicious. I used plain, natural oatmeal and the mixture of the honey and peanut butter and chia seeds is just scrumptious!! You forget you are eating healthy. I have to add the bananas in the morning because of my texture sensitivity but it’s like eating a healthy banana pudding… the only things missing are the Vanilla Wafers!! Love it!!
