Quinoa Salad

  1. 1/2 cup cooked quinoa
  2. 1 Tbsp EVOO
  3. pink salt to taste
  4. Bragg Liquid aminos
  5. 1 Tbsp fresh lemon juice
  6. 1/2 medium tomato, diced
  7. 1/2 medium cucumber, peeled, diced
  8. 2 Tbsp. pitted, chopped kalamata olives
  9. 2 Tbsp. finely chopped fresh parsley
  10. 1 Tbsp finely chopped fresh mint leaves
  1. Combine quinoa, oil, salt (if desired, Bragg Liquid Amino (if desired), and lemon juice in a medium bowl; mix well.
  2. Add tomato, cucumber, and olives
  3. Cover and let marinate for 2 - 3 hours in the fridge before serving
