- 1/2 cup cooked quinoa
- 1 Tbsp EVOO
- pink salt to taste
- Bragg Liquid aminos
- 1 Tbsp fresh lemon juice
- 1/2 medium tomato, diced
- 1/2 medium cucumber, peeled, diced
- 2 Tbsp. pitted, chopped kalamata olives
- 2 Tbsp. finely chopped fresh parsley
- 1 Tbsp finely chopped fresh mint leaves
- Combine quinoa, oil, salt (if desired, Bragg Liquid Amino (if desired), and lemon juice in a medium bowl; mix well.
- Add tomato, cucumber, and olives
- Cover and let marinate for 2 - 3 hours in the fridge before serving

While I have worked in corporate America as a certified senior project / program / portfolio manager for Fortune 500 companies like Microsoft, Procter & Gamble & IBM, my passion is service. It has always been my desire to live a life of service to others; which I took every opportunity to explore as an active member of many of my church’s ministries and of my public service sorority, Delta Sigma Theta, Inc.
