Eggplant Pizza Rounds

Everyone loves pizza.  However, the calories and fat that come with it can make you feel bloated and/or sorry you ever ate it.  Well, Fit, Fyne & Fabulous is here to give you a healthier alternative.  These eggplant pizza rounds are full of flavor, flourless and helps you achieve your daily veggie intake. This version contains turkey Italian sausage.  You can switch up the ingredients if you are a vegetarian or would prefer another meat topping.  Just make sure you use meats that are lower in fat (i.e. chicken, beef or lean beef).

Ingredients:

  • One Eggplant
  • 1 to 2 Tomatoes (chopped)
  • 1 Small Can of Tomato Sauce
  • 2 Stevia Packets (to cut the acid in the sauce)
  • Basil
  • Oregano
  • Parsley
  • Fresh Garlic (garlic powder is fine as well)
  • Cooking Spray
  • 1lb of Turkey Italian Sausage
  • 1 Small Red, Green and Yellow Pepper
  • 1 Small Onion (chopped)
  • Reduced Fat Parmesan Cheese

Directions:

  1. Preheat the oven to 350 degrees.
  2. Chop all of the peppers, onions and tomatoes.
  3. Brown Italian sausage in a pan sprayed with a little cooking spray.
  4. Drain any excess oil (shouldn’t be too much).
  5. Remove meat from the pan and set aside.
  6. Spray the same pan used to brown the sausage to saute the onions, peppers and garlic.
  7. Add Italian sausage, chopped tomatoes and tomato sauce.
  8. Let the mixture cook down and add basil, oregano, parsley and stevia to taste.
  9. Slice the eggplant in rounds.
  10. Spray a baking pan with  cooking spray and place each eggplant round on the pan.
  11. Sprinkle each round with a layer of Parmesan cheese.
  12. Place a layer of sauce mixture over the Parmesan cheese.
  13. Top the sauce with another sprinkle of cheese.
  14. Bake the eggplant rounds for 30 minutes.

Once done, take them out of the oven and let cool for five minutes. Enjoy!!! 10881358_10200256832699970_870698764_n

  • LOVED THIS RECIPE!!! I used Chicken Italian sausage with shallots instead of onions and i was AMAZING!! I ate it all myself (grazed all day)!! OMG, I think I over did it ๐Ÿ™‚ @tynica50 great recipe, thanks!

    @tynica50 ……this recipe was so easy to prepare yet unique in taste and looks. I didn’t add cheese…and guess what? ?? I didn’t miss the bread or the cheese. I like how the meat in this recipe can vary depending on the baker’s desires so I used Italian sausage.
    This will definitely become a weekly staple in my home. And it’s kid friendly. Awesome recipe!

    This recipe is excellent. This is my second time making it. I make mine with shrimp and make my husbands with Italian Spicy Turkey sausage. We love the combination of the flavors. It is also easy to make. Clean eating so good!

    Baby let me let you about these eggplant pizza rounds. I used turkey smoked sausage because I did not have any Italian sausage. This is so good.

    Hello??!!! Is this thing on??!!!!! When I tell you these Eggplant Pizza Rounds dome changed my whole life! This was my first time ever buying an eggplant therefore first time preparing one! Followed Coach Twyโ€™s recipe (with the exception of I added crushed red pepper for a bit of spice)!! And O-M-G!!!! It is delicious!!!! I am totally outdone!

    Cooked the eggplant pizza rounds for lunch today.
    Very tasty, the pan is empty. Hubby turned up his nose when I said eggplant, told him to taste anyway. He ate 3 rounds.๐Ÿ˜‚ This is going into the rotation. 5 stars.

    These are sooooo GOOD!!!! I couldn’t believe how tasty they were. I made them twice once with hot Italian turkey sausage (store made) and once with Butterball Turkey Italian sausage that comes in the roll. Both versions were so tasty.     These eggplant pizza rounds are very, very tasty. I love them better than pizza because I didn’t have to chew a tough crust (smile). I used turkey sausage and I ate too many of them. This is a favorite for me! Please try them.
