- 1 large head of broccoli, chopped into bite size florets
- 2 fresh crisp apples, cored and chopped bite size (Honey Crisps are super Sweet For Fall)
- 1/2 cup chopped raw walnuts, or pecans
- 1 cup carrots, roughly chopped
- 1/4 cup dried goji, or cranberries
- 1 small red onion, chopped
- 5 Tbsps apple cider vinegar
- 3 Tbsps raw honey
- 3 Tbsps extra virgin olive oil
- 2 Tbsps dijon mustard
- 2 Tbsps chopped fresh parsley leaves
- 2 tsp red pepper flakes
- sea salt & pepper to taste (about a 1/2 tsp each)
- In a small bowl whisk together all dressing ingredients. Chill until ready to use.
- Bring a medium pot of water to a rapid boil. Add in a tsp of salt and the broccoli florets.
- Cook until crisp tender, 1-2 minutes, then drain and rinse in ice water to immediately stop the cooking process.
- In a large salad bowl toss together broccoli, apples, walnuts, carrots, goji and red onion.
- Pour in dressing and gently toss until evenly coated.

Another delicious dish. I didn’t think I would like the homemade tangy dressing but it is a great contrast with the apples and nuts. Sweet and tangy infusion so it was a good mix!
O.M.G.!!!!! This is absolutely delicious! It has the perfect balance of salty and sweet. I want to drink the salad dressing! It belongs in its own bottle. Do yourself a favor and try this recipe!
Oh my goodness!!! This salad and dressing was DELICIOUS!!! I substituted raddishes for the red onions since I don’t care for red onion. I was skeptical about the dressing but boy was I wrong! The dressing was so easy to prepare and really brought the salad to life! This salad with the dressing will definitely be in rotation!
This salad is so good. Easy to make and tasty. The dressing is perfect. A little sweet, tart and spicy.

Only thing I will do differently next time is the dressing. I will use 50/50 (maple syrup/Dijon mustard)
