Chicken Detox Soup

Chicken Detox Soup

  1. 3-4 small chicken breasts
  2. 3 Tbsps avocado oil, coconut, or olive oil, divided
  3. 1 large yellow onion, diced small
  4. 4-5 large celery stalks, sliced
  5. 2 large carrots, peeled and chopped
  6. 1 red bell pepper, diced
  7. 8 cups organic chicken broth, or bone broth
  8. 1/2 tsp. turmeric powder
  9. 1/2 tsp grated ginger
  10. 1½ tsp. sea salt
  11. 15 oz cooked chickpeas or white beans, drained and rinsed
  12. 2 cups organic broccoli florets, bite size
  1. In a large stock pot or dutch oven, heat 2 Tbsps. oil over medium-high heat and cook chicken breast until nicely browned, about 4 minutes on each side.
  2. Set aside on a plate and shred it using 2 forks once cool.
  3. Add the remaining oil and sauté onion, celery, ginger and carrots, and pepper stirring occasionally, for about 5 minutes.
  4. Stir in the chicken stock, turmeric, sea salt and chickpeas, or white beans; bringing to a boil.
  5. Add shredded chicken, cover and turn down heat to a simmer for about 20 minutes.
  6. Add broccoli, cover and simmer an additional 8-10 minutes on low. Enjoy!

    This is one of my favorite recipes. The flavors are perfectly balanced will make your soul sing! I will never eat another can of chicken soup, as it does not even come close to being as good as this. Definitely worth the preparation time.

    I got this recipe during the summer meal prep challenge, and I have to say, I’ve made it several times since then. It’s very easy to prepare, very flavorful and filling. It’s definit not your mother’s chicken soup….. it’s way better!!!!!

    Nicole Dyer-Twyman, I made this soup a while ago for one of our challenges. I let my family taste it and I’ve been making it ever since. Every time I turn around SOMEBODY is asking me to make soup. All that to say…yes, it is so good 😋

    This soup is delicious!
    Yes, there’s a bit of prep but I love to cook and actually LIKE all the chopping-lol! I cooked my chicken in the air fryer seasoned with a bit of all-purpose seasoning. Other than that, I followed the recipe.
    I shared some with a friend and she loves it too!! Now if it would just snow!!!!
