Crockpot Vegetable Soup

Crockpot Vegetable Soup

  1. 10oz. new baby potatoes, cut in quarters
  2. 2 cups organic carrots
  3. 1 1/2 cup frozen organic garden peas
  4. 6 celery ribs, sliced
  5. 1 golden beetroot peeled and sliced
  6. 1 cup chopped fresh green beans
  7. 2 small red bell peppers, seeded and chopped
  8. 2 fresh garlic cloves, minced
  9. 1 yellow, or red onion, chopped
  10. 3 dried bay leaves
  11. 4 cups vegetable broth, or bone broth
  12. sea salt and fresh ground black pepper, to your taste
  13. 2 heaping Tbsp fresh thyme leaves
  1. Place all ingredients in the crockpot and cook on LOW for 6-7 hours or HIGH for 3-4 hours.
  2. Remove bay leaves.
  3. Even tastier the next day!
