Omg, I have totally found a new breakfast favorite!!! Move allllll the way over, overnight oats, and Gooooood Morning to my new fav, “Fabulous Quinoa Parfait!”
Believe it or not, girrrrl this could also make an amazing dessert, now that I think of it! Here’s what you need to try this dish:
Makes 4 servings
2 cups cooked quinoa
1 cup sliced fresh strawberries
1 cup fresh or frozen blueberries
1 cup fresh or frozen raspberries
3 cups low-fat (1%) plain Greek yogurt
1 Tbsp raw honey (or pure maple)
How to prepare our Fabulous Parfaits:
1. Evenly layer quinoa, strawberries, blackberries, blueberries, raspberries, yogurt, and honey or maple syrup in a tall glass if you plan to eat immediately.
2. You can prepare it in a mason jar, and refrigerate for up to 3 days, if you are meal prepping for the week. Repeat the layering process with remaining ingredients.
When I tell you, it’s fabulously delicious, it truly is!!!!!! It’s also GOOOOOOONE! So, make your own diva! LOL!

Can I use frozen strawberries?
Yes you can, but I think once they melt you will be watering down the flavor. I would thaw them before prepping this meal.
Fabulous Berry Quinoa Parfait….what can I NOT say??? It’s quick, easy to make, filling, satisfies my sweet tooth and so delicious!! I usually make several jars and refrigerate. I tell ya, you’ll wonder why you’ve never tried it. Don’t let the quinoa fool ya! Coach Twy’s recipes always keep you wanting for more!!!
