
Looking for a filling breakfast that includes protein, veggies and healthy carbs in one serving; well, look no further this new fabulous dish has you covered!!! It literally takes 15 minutes to make!! It’s our Fabulous Breakfast Scramble, people. Gaaaaah, we love it! So here it is, today’s recipe!!
- 1 small Shallot (loooove these little onion like things 🙂 )
- 1 Tsbsp of Olive Oil
- 1 small Red Pepper (add in green peppers if you prefer)
- 1/2 small Sweet Potato
- Sliced Mushrooms
- Ground Turkey Scramble (we love the Jimmy Dean Brand)
- 2 Whole Eggs
- Fresh Spinach leaves
Directions
- Bake your sweet potato in the oven in foil for (30 minutes); we prefer the microwave prepared sweet potatoes; only 7-9 minutes in the microwave.
- While your sweet potato is baking, cut your shallot, mushroom and Red pepper into bit sized cubes
Crack two eggs into a bowl, along with your turkey crumbles and season lightly with Pink Himalayan salt and cracked pepper
- Mix the eggs, seasonings and crumbles together
- In a pan, place about 2 tablespoons of olive oil, add in the Shallots, mushroom, spinach, and Red Peppers (or any other veggie you love for that matter!). Sauté until they are soft.
- Once your veggies are soft, pour in your egg / crumbles mix from your bowl
- Scramble the eggs with veggies in your pan for a few minutes until eggs are completely cooked / scrambled
- Place scrambled eggs / veggies on a plate (you’re almost done!!! 🙂 )
- Cut your small sweet potato into two pieces. Take 1/2 of the sweet potato and cut into cubes
- Add sweet potato cubes on top of your breakfast scramble (now you’re done)
- Have a seat, kick up your heels, and consume this dish immediately. So filling and so tasty!! Did I say it’s fabulously healthy too diva?! Enjoy!!!

Coach Twy this is really good and simple! I wasn’t sure about the sweet potatoe but after putting it together, I really enjoyed it. It was a nice sweet and savory mix.
I didn’t have turkey crumbles so I used the last little bit of italian sausage I had and also used Cilatro (my fav herb) in place of spinach. Since I used the pork sausage, I didn’t add salt but I did use the All purpose seasoning recipe from my 21 day fitness plan (I seasoned to taste).
Overall, this was a really filling and tasty breakfast that I will definitely make again.

This scramble was delicious! The egg, mushrooms,spinach and turkey sausage will make your mouth burst with flavor.
