Healthy Fries with Butternut Squash

Healthy Fries - Butternut Squash

  1. One large butternut squash, cut into 1/2" sticks
  2. 1 Tbsp avocado, coconut, or virgin olive oil
  3. 1 tsp garlic powder
  4. ½ tsp smoked paprika
  5. ½ tsp dried thyme
  6. sea or pink salt and fresh cracked black pepper to taste
  1. Preheat oven to 450 f. degrees.
  2. Place the butternut squash sticks into a large bowl.
  3. Drizzle with oil, and sprinkle with garlic, paprika, thyme and salt. Evenly coat the butternut squash sticks with the oil and seasoning.
  4. Place the fries evenly in a single layer on two baking sheets lined with parchment paper or foil.
  5. Be sure not to over-crowd the pan, because that will create too much steam, which is often the reason the fries come out soggy when baked.
  6. This is the reason I use two baking sheets instead of one - being super careful to give each fry the space it deserves.
  7. Bake for 20-30 minutes, until tender inside and crispy outside.
  1. Divide fries into 3 equal parts. I part = 1 serving

    I don’t usually eat butternut squash. I just never think about it but after eating this…I’m going to make it a part of my meals. So easy and tasty!!!

    The butternut squash fries are my new favorite snack! They are a mouthful of goodness that is hard to put down. If you are a person who likes savory snacks like chips this is the ultimate replacement! My mouth was in heaven! A must try!!!
