It’s a classic comfort food, right? But what if I told you that you could enjoy this comfort food while also making a healthy choice?  Yup, Yup, you can!!

Today is the day our beloved cheeseburger gets a nutritious LOW CARB makeover. Say hello to the Zucchini Bun Cheeseburger Sliders – a creative twist that swaps out the traditional bun for slices of zucchini, giving you a guilt-free yet mouth smacking alternative!!

It’s also a fantastic source of vitamins and minerals, including vitamin C, vitamin A, and potassium.
But what you really need to know, is its high water content aids in hydration and digestion.  Yes, we are eating our water with this burger sis!!! By using zucchini slices as buns, you’re not only reducing your carbohydrate intake but also introducing an extra dose of vitamins, fiber  AND hydration to your meal.

Recipe: Zucchini Bun Cheeseburger Sliders

Ingredients:

  • 1 extra-large zucchini or 2 medium/large zucchinis, cut into 16 1/2-inch slices
  • Sea salt and freshly ground black pepper to taste
  • 1 lb. lean ground beef
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1 tsp smoked paprika
  • 1 tsp dried oregano
  • 4 slices of cheddar cheese, cut into quarters to get 4 small squares
  • Avocado oil cooking spray

 

Instructions:

  1. Rinse the zucchini thoroughly and pat dry with a towel. Trim the ends and cut into 1/2-inch thick rounds. Sprinkle with salt and pepper, then set aside on paper towels.
  2. In a bowl, combine ground beef and seasonings. Shape into 8 mini-patties, about 1-inch thick.
  3. Pat zucchini rounds dry and cook in a greased skillet over medium-high heat until slightly charred (1-2 minutes per side). Set aside.
  4. Sear burger patties on each side until golden (2-4 minutes). Add cheese and cook until melted.
  5. Assemble sliders using zucchini rounds as buns. Serve immediately.

Mini Zucchini Burgers

Ingredients

  • 1 extra large zucchini or 2 medium/large, cut into 16 1/2inch-slices
  • sea salt and freshly ground black pepper to taste
  • 1 lbs. lean ground beef
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1 tsp smoked paprika
  • 1 tsp dried oregano
  • 4 slices of cheddar cheese cut into quarters to get 4 small squares
  • avocado oil cooking spray

Instructions

  • Thoroughly rinse your zucchini and pat the excess moisture with a towel.
  • Carefully cut off the ends. Now simply cut across the zucchini to slice into 1/2-inch thick rounds.
  • Sprinkle rounds with a tiny bit of salt and pepper, then set aside on paper towels.
  • In a medium bowl, combine ground beef and all seasonings; stir until well combined.
  • Shape your ground beef into 8 equal sized mini-patties, about 1-inch thick.
  • Gently pat zucchini rounds dry with paper towels.
  • Lightly grease a large skillet with avocado oil cooking spray and heat over medium-high heat, then add sliced zucchini rounds, cook until slightly charred, about 1-2 minutes per side.
  • Set zucchini aside on a plate.
  • Add burger patties to the pan and sear each side until nicely golden, about 2-4 minutes. Flip to the other side, then add the cheese.
  • Continue to cook until the beef is done to your liking and cheese is nice and melty!
  • Assemble your burger sliders as shown, and serve immediately. Enjoy!

Notes

Feel free to swap beef for ground turkey, ground chicken or even ground bison! All excellent NON-red meat choices!
